Single player gameplay: any ideas?

Since simple dogfighting gets kind of, well, old after a while I have
been thinking of changing the gameplay a little bit, at least in
single player mode. Maybe something influenced by Missile Command,
where you try to protect some buildings on the ground from incoming
bombers/missiles/asteroids/aliens/boybands/whatever? This could of
course also be extended to multiplayer mode later, if it is fun in
single player mode.
The objective would be to protect the 'city' as long as possible, and
your plane would be refitted with ammunition between every wave of
