This is sort of complicated.
If you just want the latest fixes for Linux/x86, Linux/amd64, or MacOSX, you want the 3323 patch. Details are here. You can patch to the latest version from any prior retail patch without grabbing everything in-between.
If you bought the new PC "Editors' Choice Edition", The Editors' Choice Edition has the Linux installer on disc 1. You'll want to patch this up, too, since there were a few fixes between ECE and 3323. The Editors' Choice Edition doesn't have a Mac installer on the disc, and I don't believe there are immediate plans for MacSoft to do an equivalent print run. However...
If you own any retail version of UT2004, including a MacSoft DVD, then the Editors' Choice content is all available to you as a free download. Most significant is the Editors' Choice Bonus Pack. If you have a non-ECE retail UT2004, and don't mind a bigger download, you should get this instead of just the 3323 patch, since many servers will require you to have ECE-BP content to join their games. Below are your options for getting this installed.
A MacOSX installer for Editors' Choice Bonus Pack plus required 3323 patches can be had in one simple installer, grab it here.
Linux users that want the ECE Bonus Pack should get the 3323 patches above, and the ECE-BP data...this is just pulled from the Windows BP installer so you don't have to pick out the relevant parts.
If you're looking for the third-party mods shipped on the ECE disc, I don't have mac/linux specific installers. However, there are other groups (sometimes the original developers) that have details on how you can download and install their mod for Mac and Linux.
Linux users that want a demo of the game can get the brand new ut2004 demo installer from here
MacOS X users that want a demo of the game can get the brand new ut2004 demo installer from here.
Those that want to patch the older demo to the latest are out of luck. If you've been playing for free for six months and want an update, you can damned well download the whole thing again. :)
