Your best bet is to set up MRTG/RRDtool (personally I'd go for RRDtool) and
then graph memory usage, cpu usage and packetloss (ping somwhere external
and graph failures) to see if they match up (i.e. a spike in CPU usage lines
up with the packetloss).

Also, if you still think the card is at fault (and you have a spare IP) try
putting in a second card on a different IP and running 5 servers through one
and 5 through the other.
